Collard Greens Omelet Recipe
Although collards are excellent in this omelet, feel free to substitute whatever greens you have on hand, including beet greens or fresh spinach.

1 Teaspoon butter
1 Teaspoon minced shallots
2 Tablespoons cooked collard greens, chopped
1 Teaspoon balsamic vinegar
1 Tablespoon chopped red bell pepper
¼ Teaspoon freshly ground pepper
3 Egg whites
1/8 Teaspoon salt
1 Tablespoon orange juice
Collard Greens Omelet : Preparation Instructions
Place ½ teaspoon butter in a small nonstick skillet on medium heat. Once the butter melts, add the shallots and sauté until translucent.
Add the greens and sauté until tender. Add the vinegar and cook for another 3 minutes. Add the bell pepper and remove the skillet from the stove. Season with pepper. Spoon into a bowl and set aside.
In a bowl, stir together the egg whites, salt, and juice. Whisk until frothy.
Place another ½ teaspoon of butter in the skillet. Once it’s melted, add the egg mixture and cook for 2 minutes, or until the top of the omelet starts to set. Turn the omelet and cook another minute. Spoon the greens mixture onto one side of the omelet and fold the opposite side over them.
